While these dice can be randomly looted from bandits and enemies throughout Kingdom Come: Deliverance 2, a more efficient method exists for early acquisition.
In Troskowitz, locate the Hired Hand NPC at the inn's dice table. Pickpocketing him directly is impossible, but at night, he sleeps near Innkeeper Betty.
The Farming Strategy
