Ultimately, choosing between Prochek and Olbram has little impact on the overall narrative. Both aim to sabotage the other; the selection boils down to personal preference.
Olbram's task involves stealing Zhelejov's maypole, requiring nighttime stealth and potentially charming a guard. Prochek's quest involves painting Olbram's bull blue, demanding dye from the tailor (Bartoshek in Troskowitz) and a lullaby potion (requiring a recipe from Radovan, plus oil, poppy, and thistle).
Prochek's task presents a slightly higher difficulty, particularly early in the game. Resource limitations (groschen) and Speech skill may hinder progress, making Olbram's quest potentially easier.
Prochek's "Mice" Quest:

After he leaves, acquire the maypole. Report to Olbram. He will then request chasing sheep from a Tachov pasture and delivering a digestive potion to Alshik.
